Trim crusts from bread slices; cut into 1/2 inch cubes. Spread into a single layer on baking pans. Bake for 10 to 15 minutes or until dry, stirring twice. Or, let stand, loosely covered, at room temperature for 8 to 10 hours. Melt the butter in a large fry pan. Add the celery and onion and saute until tender. Stir in parsley and giblets. Remove from heat. Place dried bread cubes in a very large bowl. Add te cooked vegetable - herb mixture. Stir. Drizzle with enough giblet or chicken broth to moisten. Toss lightly. Season to taste with salt and pepper. Use to stuff turkey or can be baked in a casserole dish at 375 degrees fahrenheit for about 25 minutes, or until heated through. NOTE:This recipe can be made with or without the giblets
